Ingredients:
Olive Oil
1 onion
1 red capsicum
2 tsp minced garlic
1 tsp cumin
1 tsp sweet paprika
1/4 tsp cayenne pepper
1 tin whole tomatoes
Salt
Pepper
140g Feta
6 Eggs
Method:
Heat oil in a fry pan, add onion and capsicum and cook until soft. Add garlic and stir in. Add cumin, paprika and cayenne and stir in.
Dice up tomatoes and pour in, season with salt and pepper. Let simmer for approx. 10 minutes whilst tomatoes thicken. Add crumbled feta.
Crack each egg over the tomato mixture arranging next to one another in the fry pan.
Transfer to the oven and bake until eggs are set (approximately 8 minutes)
