Mexican Vegie Mix

 

Ingredients:

1 red onion

5 x small corn cobs

400g Black Beans

1 tbs Taco Season Mix

1 cup Vegetable stock

200g vine cherry tomatoes

1/2 cup coriander leaves

1/2 an avocado, mashed


Method:

Preheat oven to 200C Place onion, corn, capsicum and beans in a baking dish.  Sprinkle with seasoning and toss to combine.  Pour over stock and top with tomatoes.

Bake for 20 minutes or until vegetables are tender and tomatoes begin to collapse.

Sprinkle with coriander and avocado.


Note: Serve with tortillas or corn chips
