Ingredients:
3kg Tomatoes
2 Red / 2 Yellow / 2 Green Capsicums
1 kg onions
5 small Sweet Thai Chillies
750gms white sugar
250gm brown sugar
1 tbsp Cayenne Pepper, Cajun Seasoning, Tumerick & Black Pepper
2 tbsp’s Curry Powder, Mustard Powder, Crushed Garlic & Salt
Approx: 1.25 litres of vinegar
Method:
Soak tomatoes and remove skin
Put all the ingredients into a big pot. Cover with vinegar, we usually use approximately 1.25 litres, but you just need to make sure it’s covered.

Bring to the boil
Once boiling, simmer, stirring occasionally for 4 hours. You’ll know it’s ready once it’s thickened.
We
usually make approximately 7 jars. Why approximately? Because we
recycle our jars so they are all different sizes, therefore it’s a bit
hard to measure.
