Ingredients
100g butter, softened
1 cup fresh bread crumbs (GF)
2 tsps minced garlic
1/2 cup parsley, chopped
2 tbsp dry sage leaves
Zest and just of a lemon
4 chicken breasts - skin on
1 tbsp butter (extra)
1 tbsp sage (extra)
Method
Combine the butter, breadcrumbs, garlic, parsley, sage, lemon zest and juice to make stuffing
Divide the stuffing and spread under the skin of the chicken breast with extra butter and sprinkle with extra sage.
Place on a baking tray and season with salt and pepper. Bake in a preheated oven at 200C for 15 minutes
Leave to rest for 5 minutes in a warm place then serve with vegetables.
