Chicken Nacho's
Ingredients
2 x taco seasoning mix
1 tsp olive oil
2 x 400g can's diced tomatoes
2 x 400g can red kidney beans, rinsed and drained
2 x Chicken Breasts (300g) shredded
1 cup shredded cheddar cheese
1/2 cup sour cream
Tortilla chips to serve
Method
Preheat oven to 220C
Steam chicken and shred (I cook chicken in Thermomix veroma for 20 minutes and then place in bowl to shred.)
Heat oil in fry pan and add taco season mix's, cook until fragrant. Add tomato and beans and bring to the boil. Reduce heat and simmer for five mintues or until sauce begins to thicken.
Mix chicken and sauce to combine and place in casserole dish. Top with cheese.
Bake in oven until cheese is golden.
Serve with sour cream and tortilla chips, or rice
