Thai Beef Salad

Ingredients

250g Cheery Tomatoes (halved)
1 cucumber, cut into chunks
30g Green Salad Mix
1/4 red onion, thinly sliced
1/2 cup mint leaves
1/2 cup coriander leaves
1 long red chilli, thinly sliced
2 tsp lime juice
1 tsp fish sauce
1 tsp brown sugar
220g beef run steak


Method

Combine the tomatoes, cucumber, salad mix, red onion, mint, coriander and chilli in a large bowl.  

Mix the lime juice, fish sauce, brown sugar in a small bowl until the sugar has dissolved.

Lightly spray a char-grilled pan with vegetable oil and heat on high.  Season the steak with pepper.  Cook for a minute on each side until well browned.  Cover loosly and rest in a warm place for five minutes before thinly slicing.

Add the beef to the salad then pour over the dressing and toss to coat.
